Check out the mac4lin project.

Really, all you need is Gnome, a nice theme, and Avant Window Navigator. I love AWN because it's a very nice dock app and I can get rid of the bottom bar on gnome which I barely use anyway. The bar at the top is enough real estate for me to place all the stuff I commonly use.
