I like the Linux version of XAMPP for local development work.

the Ubuntu version of PHP has some stupid GD issues among other things.

Also XAMPP is set up to be for dev, not production, so its a bit more secure to run on your local machine AFAIK. It also tends to have a more up to date version of everything.
